Ingredients
- cooking spray
- 2 lb baby red potatoes* halved
- 2 tbsp minced parsley for garnish optional
Parmesan Seasoning
- ⅓ cup olive or avocado oil
- 3 cloves garlic minced
- 1½ tsp salt
- ½ tsp black pepper
- 1½ tsp Italian seasoning
- ⅓ cup finely grated Parmesan cheese
Instructions
- Preheat oven to 400 degrees F. Line sheet pan with foil and coat with cooking spray.
- Combine parmesan seasoning ingredients in a large bowl. Add cut potatoes and toss to coat. If your bowl comes with a lid, cover and shake.
- Spread potatoes in a single layer on baking sheet. Bake for 20 minutes, flip potatoes, bake for an additional 15-20 minutes or until golden brown and fork tender.
- Sprinkle with parsley, if desired, and serve.
