Ingredients
1poundbaconchopped
1/4cupsugar
2tbspbutteroptional
1/4cupred wine vinegar*
1/2cupwater
2poundsBrussels sproutshalved
2onions**chopped or sliced
salt and pepperto taste
Instructions
In a large skillet, cook chopped bacon over medium-high heat until crispy. Transfer to a plate lined with paper-towel.
In same pan with bacon fat, heat sugar until it begins to melt. Reduce heat and cook until sugar begins to brown, stirring frequently.
Add butter and stir until melted (optional). Add vinegar and stir for 1 minute. Add water and bring to a boil.
Add the sprouts and onions. Simmer with the cover on for 5 minutes.
Uncover and cook, stirring occasionally, for about 15 minutes or until most of the liquid has been absorbed and the sprouts and onions are golden.
Season with salt and pepper. Top with crispy bacon and enjoy!
Notes
*If you do not have red wine vinegar, try white wine vinegar, apple cider vinegar, or balsamic vinegar.**Try using red onions instead of yellow or white onions for a different flavor!
