Caramelized Brussels Sprouts with Bacon

Ingredients

  • 1 pound bacon chopped
  • 1/4 cup sugar
  • 2 tbsp butter optional
  • 1/4 cup red wine vinegar*
  • 1/2 cup water
  • 2 pounds Brussels sprouts halved
  • 2 onions** chopped or sliced
  • salt and pepper to taste

Instructions

  • In a large skillet, cook chopped bacon over medium-high heat until crispy. Transfer to a plate lined with paper-towel.
  • In same pan with bacon fat, heat sugar until it begins to melt. Reduce heat and cook until sugar begins to brown, stirring frequently.
  • Add butter and stir until melted (optional). Add vinegar and stir for 1 minute. Add water and bring to a boil.
  • Add the sprouts and onions. Simmer with the cover on for 5 minutes.
  • Uncover and cook, stirring occasionally, for about 15 minutes or until most of the liquid has been absorbed and the sprouts and onions are golden.
  • Season with salt and pepper. Top with crispy bacon and enjoy!

Notes

*If you do not have red wine vinegar, try white wine vinegar, apple cider vinegar, or balsamic vinegar.
**Try using red onions instead of yellow or white onions for a different flavor!
